Se basa en la idea de que algunos carbohidratos se descomponen m\u00e1s lentamente que otros, lo que tiene diferentes efectos en los niveles de az\u00facar en la sangre.<\/p>\n\n\n\n<p>Los alimentos con un puntaje de IG m\u00e1s bajo (55 o menos) tienden a digerirse m\u00e1s lentamente y provocan aumentos menores en los niveles de glucosa en sangre en comparaci\u00f3n con aquellos con puntajes m\u00e1s altos (70 a 100).
