Ils regorgent de nutriments et apportent de nombreux avantages pour notre sant\u00e9 globale. Cependant, certaines personnes peuvent \u00eatre concern\u00e9es par leur index glyc\u00e9mique (IG).<\/p>\n\n\n\n<p>L&rsquo;IG est une mesure de la rapidit\u00e9 avec laquelle les glucides contenus dans les aliments augmentent le taux de sucre dans le sang apr\u00e8s les avoir consomm\u00e9s. Il est donc important de savoir quels l\u00e9gumes verts ont une valeur IG faible ou \u00e9lev\u00e9e afin de pouvoir faire des choix alimentaires \u00e9clair\u00e9s.<\/p>\n\n\n\n<p>En ce qui concerne les l\u00e9gumes-feuilles comme les \u00e9pinards et le chou fris\u00e9, ces l\u00e9gumes ont tendance \u00e0 avoir un indice glyc\u00e9mique tr\u00e8s bas &#8211; entre 0 et 50 sur l&rsquo;\u00e9chelle utilis\u00e9e par les nutritionnistes. Cela signifie qu&rsquo;ils ne provoquent pas de pics rapides de glyc\u00e9mie lorsqu&rsquo;ils sont consomm\u00e9s, ce qui en fait un choix id\u00e9al pour les diab\u00e9tiques ainsi que pour ceux qui recherchent des options plus saines que les sources de glucides f\u00e9culents comme les pommes de terre ou le riz blanc.<\/p>\n\n\n\n<p>D&rsquo;autres l\u00e9gumes verts, notamment le brocoli, le chou et les choux de Bruxelles, ont \u00e9galement des IG relativement bas allant de 15 \u00e0 55 selon des \u00e9tudes de recherche attendues par Harvard Health Publishing. L&rsquo;asperge s&rsquo;est av\u00e9r\u00e9e \u00eatre \u00e0 l&rsquo;extr\u00e9mit\u00e9 sup\u00e9rieure de cette fourchette \u00e0 environ 60, mais toujours inf\u00e9rieure \u00e0 de nombreuses autres sources v\u00e9g\u00e9tales, ce qui en fait une autre excellente option si vous voulez quelque chose de plus nutritif que les c\u00e9r\u00e9ales transform\u00e9es , mais que vous ne voulez pas non plus que votre glyc\u00e9mie augmente trop rapidement!<\/p>\n\n\n\n<p>Les haricots verts se classent \u00e9galement assez bas sur le tableau IG avec des valeurs allant de 30 \u00e0 60 selon le type de vari\u00e9t\u00e9; cela en fait de bonnes alternatives m\u00eame lorsqu&rsquo;on les compare aux p\u00e2tes de bl\u00e9 entier ou au riz brun qui se pr\u00e9sentent g\u00e9n\u00e9ralement entre 55 et 70 respectivement par mesure de taille de portion prises lors de sessions de test adapt\u00e9es en 2014.<\/p>\n\n\n\n<p>En conclusion, il existe de nombreuses options vertes disponibles si vous recherchez des alternatives saines qui ne font pas trop grimper votre glyc\u00e9mie \u2013 notamment les l\u00e9gumes-feuilles comme les \u00e9pinards\/chou fris\u00e9 suivis de pr\u00e8s par le brocoli\/chou et finalement bien arrondis les haricots verts et les asperges \u00e9tant l\u00e9g\u00e8rement plus \u00e9lev\u00e9s sur l&rsquo;\u00e9chelle de l&rsquo;indice
