Manger une vari\u00e9t\u00e9 de l\u00e9gumes fournit au corps des vitamines, des min\u00e9raux, des antioxydants et d&rsquo;autres compos\u00e9s b\u00e9n\u00e9fiques essentiels qui aident \u00e0 r\u00e9duire le risque de maladies chroniques telles que les maladies cardiaques et le cancer.<\/p>\n\n\n\n<p>L&rsquo;indice glyc\u00e9mique (IG) est un syst\u00e8me de classement utilis\u00e9 pour mesurer la rapidit\u00e9 avec laquelle les aliments contenant des glucides augmentent la glyc\u00e9mie apr\u00e8s avoir \u00e9t\u00e9 consomm\u00e9s. Il est important de comprendre quels l\u00e9gumes ont des valeurs IG faibles ou moyennes, car cela peut affecter vos choix alimentaires globaux lorsqu&rsquo;il s&rsquo;agit de g\u00e9rer votre poids ou de r\u00e9duire le risque de d\u00e9velopper un diab\u00e8te.<\/p>\n\n\n\n<p>De nombreux l\u00e9gumes \u00e0 feuilles vertes non f\u00e9culents comme les \u00e9pinards, le chou fris\u00e9 et la laitue ont des valeurs IG tr\u00e8s basses allant de 0 \u00e0 15 sur l&rsquo;\u00e9chelle ; ce qui signifie qu&rsquo;ils ne provoquent que de petites fluctuations de la glyc\u00e9mie au fil du temps lorsqu&rsquo;ils sont consomm\u00e9s r\u00e9guli\u00e8rement dans le cadre de repas \u00e9quilibr\u00e9s tout au long de la journ\u00e9e.<\/p>\n\n\n\n<p>D&rsquo;autres l\u00e9gumes tels que les pommes de terre, le ma\u00efs sucr\u00e9 et les carottes contiennent g\u00e9n\u00e9ralement des quantit\u00e9s plus \u00e9lev\u00e9es de glucides par rapport \u00e0 leurs homologues \u00e0 feuilles vertes, ils ont donc tendance \u00e0 avoir des IG plus \u00e9lev\u00e9s entre 16 et 50 en moyenne selon leur vari\u00e9t\u00e9\/cultivar particulier.<\/p>\n\n\n\n<p>Lorsque vous s\u00e9lectionnez des vari\u00e9t\u00e9s de l\u00e9gumes f\u00e9culents, essayez plut\u00f4t d&rsquo;opter pour celles qui sont plus basses sur l&rsquo;\u00e9chelle de l&rsquo;IG, telles que les ignames ou les lentilles. Celles-ci vous fourniront une lib\u00e9ration d&rsquo;\u00e9nergie plus soutenue que certaines alternatives \u00e0 IG \u00e9lev\u00e9 comme le riz blanc ou les pommes de terre bouillies. \u00e9quilibrez-les en consommant \u00e9galement des prot\u00e9ines et des graisses au moment des repas!<\/p>\n\n\n\n<p>De plus, les l\u00e9gumes de type racine\/tubercule, y compris la betterave, ont \u00e9galement un rang assez bas (30-40), ce qui en fait une autre excellente option aux c\u00f4t\u00e9s des l\u00e9gumineuses, des haricots, des pois, etc. &#8211; toutes ces options offrent des sources complexes de glucides ainsi que des vitamines et des min\u00e9raux n\u00e9cessaires pour un bien-\u00eatre optimal \u00e0 long terme!<\/p>\n\n\n\n<p>En conclusion, choisir judicieusement parmi les deux types&nbsp;: les l\u00e9gumes f\u00e9culents et non f\u00e9culents aident \u00e0 assurer une nutrition optimale tout en nous permettant de contr\u00f4ler le taux de r\u00e9ponse de notre corps lorsqu&rsquo;il s&rsquo;agit de dig\u00e9rer diff\u00e9rents types d&rsquo;aliments &#8211; aidant finalement \u00e0 maintenir une glyc\u00e9mie saine et stable sur de longues
