Glycaemic Index

Glycaemic (or glycemic) Index is a measure of how quickly food raises blood sugar levels, on a scale from 0 to 100. Foods with a high GI are absorbed quickly and cause a rapid rise in blood sugar, while foods with a low GI are more slowly digested and cause a slower, steadier rise in blood sugar.
